Does anyone know where I can find a lawyer that operates in both China and the UK?

China and Hong Kong don't need lawyers. Almost everyone pleads guilty. Those who don't are found guilty. It is an efficient process.
I'd seek advice about UK Law Firm certified to operate in China from UK Embassy in China.
Yahoo-gle:
http://www.legal500.com/c/china/directory
http://www.hg.org/lawfirms/china/beijing.html
You can seek for lawyer recommendation on both links.
See also 'UK Law Firm operate in China' or 'UK Law firm certified to operate in China' for more web links on Yahoo search.

If your interest is corporate law and not domestic law, the lawyers that represent HSBC in Hong Kong, since HSBC is also in London would be my first call, perhaps check with the bank for a referral.
Before you venture into the unknown learn some terms related to your topic "barrister" , "solicitor", and "club of nine".
