I've never noticed any Chinese gluten-free products specifically for coeliacs so was wondering if it is an uncommon illness here. I know lactose intolerance and diabetes is common here though...

Coeliac disease is indeed much rarer in China than in Western countries, and historically there've been very few reports about this in China. But, new research has concluded that it may actually be more common here than we believe. Read the article below.
But the bottom-line is that if you are a coeliac and you come to China to love/work, you're going to be much more limited in your choice of gluten-free products. Import stores will most likely stock some gluten-free products, but you're best bet is to just eat more fruit, veg and protein based foods.
You can eat a gluten free diet in China. A friend of mine has Celiac (how we spell it in America) disease and he did fine here.
Just FYI in Chinese it's called 乳糜泻 - ru mei xie
You do know that there is a medicine now you can take that will enable you to eat gluten, right? I can't remember the name but it' s called AT-1001 or something like that. The friend I mentioned is back in the US and he takes it.
The reason it's not a problem here is because rice is gluten free. It's only a problem where wheat is often used in food products. Even if someone in China has Celiac disease, they may never know because they just eat rice.
