Q: Best noodles in China?

What are your favourite noodles in China?

I will say Lanzhou La Mian beef noodles or Wuhan's Hot dry noodles (re gan mian)

The best noodles by far are those from the north, using real wheat as opposed to that slimey rice concoction they call noodles in the south. I like most Xi'an noodles. I personally like my noodles dry but nicely lubricated with some oil and with a nice, firm bite (al dente as they call it in Italy), and not floating in too much water that might as well have been scooped out from a toilet bowl. I think gan chao (dry fried) noodles are quite honest because you see what you get as opposed to having to fish it out of some murky water (yuk). I like my noodles the way I like men: upfront, clean, no pretences or dark secrets lurking beneath the surface.

I agree with the LanZhou La Mian.. yum! Also like Sichuan Province's Dan Dan Mian..
