You must receive Release letter and FEC Cancel Cert. from your old School.
With both documents handy, your new School can extend your Residence permit. Not really 'extend', but change records of sponsorship at PSB.
Most important part is: 'you can't walk (quit Contract) out of RP sponsor, if School didn't violate the Contract'.
You should add more details as 'why and how did you quit'; 'did you sign Contract with new School'; and similar.
You can get all info about your Q by dialing SAFEA (Foreign Expert Bureau) in your Province.

Your expired contract is not relevant for changing jobs. You need ONLY what icnif stated:
1) Release letter
2) cancellation receipt of current FEC (or work permit)
your current employer MUST give you these when the contract expires and you don't renew it with them.
If they refuse then take his advice and contact SAFEA

If you completed Contract, your employer must take you to PSB, where you'll get 30-days RPermit extension, which is enough time for your new employer to extend RP for the duration of new Contract. You need both mentioned docs. for that, and you cannot do it yourself. School rep. must be present at PSB. Old Contract isn't required.
By Chinese law, School must give both docs. to you in 30-days after your last working day.

The procedure is very simple.
When your job ended (by whatever means) so you from your current employer so called:
1) Release letter
This is just a confirmation, stamped by your previous employer that your job ended at given time.
2) Your workpermit must be either canceled and you need to receive a confirmation about that or, under certain conditions, your new employer can transfer it onto them.
In any case - issuing of the new work permit takes 15 working days.
Within 10 days from your old contract expiration you have to visit PSB and inform them about the situation. Your residence permit will be canceled and you will get 30 days temporary permit - that gives your new company time apply for your new residence permit after receiving your new work permit (in this case the proof of application for your work permit accompanies the request for 30 days temporary visa).
After getting the work permit you then apply for the new residence permit.

PSB = Public Security Bureau.
In the case of visa issues (getting the 30 day tourist visa so you can get a new resident permit) then it is actually the Entry-Exit bureau that you need to go to. This is the buliding where they take visa applications and issue new ones.

Yes, Hotwater is right. You need to go to 出入境管理局 (Chu Ru Jing Guan Li Ju) - Exit and Entry Administration Buro.
Actually why you do not go to PSB directly to ask?
I f you do not speak Chinese so you mau neef an "interpreter" but you still learn conditus valid for your region.
Your situation is of your own doing. You did not think or plan ahead. My guess, you quit without notice and then you expect them to help you after burning them. Only someone with a mental defect would think that.
You're being purposefully ambiguous "let's say I lost my contract'.
Screw you, leave the country start over from the beginning.
That's your only option! Deal with it, it's all your fault.
