Very difficult for ordinary Chinese. Visit to EU is much easier when married to European.
Chinese must have steady job, own an apartment, have relatives in China, and money on the Bank account. I don't remember how much money, butt... sum was very high, when I wanted to go with my girl to EU two years ago.

All is designed to make sure, Chinese will return to China, and not stay in EU after the visit. IMHO

Exactly. My wife no need to state nothing except her married licence and traveling insurance when we was last week in embassy to arrange visa for her first trip to my home. But others have to show up with bank account records, work records and sometimes permission or delegation letter from their chinese employer.
Just to make sure, they will come back, so thats why have to deposite some large sum, i heard about 100.000rmb, but not sure. Also they need to show money they will use during the time of vacation, hotel booking, insurance , invitation letter ...
If you work in Topconn for example, I thing there is 0% possibility you will be able to get EU visa :-)

They don't need to own an apartment.
Instead a letter from their company stating they will get back to work was enough for my wife before getting married.
You need to either have an invitation from someone you can qualify a relation with, or you need to go as part of a tour group (which will then be forced shopping rather than actual touristing)
you will need to apply for the visa through the country you are planning to go to first, there will be guidelines on the web for the specific country
If you go via an invitation you can get around the need for having a big pile of money in your bank, if you have the person inviting you declare that he/she will be financially responsible for you.
there is also a bit of paperwork needed and you need to have a plane ticket reservation to present when you hand in your application

From what Iv heard it's quite difficult. I have a friend who went with her boyfriend last year. She had to prove that she had a full time job, and that she would resume it when she returned. That she had more than 10,000 Euro's ready for her travel. & most importantly, that her interviewer for the Visa application approved of the travel. In her case she was lucky, as she received an interview time slot when another applicant pulled out. So it only took 2 months to process, usually it can take 6 months or longer.

the part of having to resume the job after returning is hardly a requirment from the authority issueing the visa but from the Chinese government. E.g some bank employees have their passport confiscated, and can apply to have their own passport back, only twice per year. The Chinese government is restricting it's people in travelling freely.
It is difficult to judge because you did not give the specific details for your case. What I can tell is that every embassy posts specific instruction for visa application on its official website. What you need is to get all the documents required and submit for approval. The policy and procedure are very transparent. I have a ORDINARY Chinese friend who already got the Schengen tourist visa for several times. In my opinion, so long as you are honest for the purpose of traveling to Europe and follow all the instruction, it is quite easy for you to get the visa.
After getting all the papers in order my wife had her visa for Denmark 3 days later - This was in December 2010 before we got married.
Difficult? Not with the correct papers, which was quite a hazzle to get.
If I recall she needed:
Bank statement
A letter from her company saying she would resume work when coming back
Return ticket
Invitation letter from me
20.000 RMB deposited in the bank
Clean criminal record (translated)
Tourist visa is only available for tour groups as previously stated.
