Q: Tell me what you want , What you really really want...

So im heading back to the Middle Kingdom in a couple of months and I have started thinking about my comfort things like Breakfast cereal and some caned baked beans, Gravy mix, timtams.black tea tooth past Deodorant. ....
What do you crave from back home that you wish you had brought ?

Food.  Can't say I wish I had brought it though because it doesn't travel very well.  But next time I find myself in South Texas I'm going to bug my mom into cooking me some of her homemade biscuits, and spend the rest of my time in some little Mexican restaurants I know of! Gotta get some proper beef fajitas, some killer cheese enchiladas w/ just the best sauce ever, served with the best Mexican rice I ever had, awesome chips still homemade straight from tortillas and served warm,,, and the best Pico de gallo you ever had!

It's easy to make mashed!

 

Get 'ma-ja-ri', peel off the skin and cut on small squares. Cook it till soft (15')  and mash it with fork (if you don't have bigger utility tool) in a bowl. Add New Zealand (not Ozz! ) square of butter, salt and some warm/hot milk and mash it a bit more, i.e. till butter mets.

That's it! 30' of cooking and prep in total. 

 

I never make it 'cause ... ohh-well .... I prefer 'French/roasted potato' or 'mifan', just because it's less work/simpler prep overall.

 

I fancy 'strudel' i.e. apple pie at the moment! .... from SF's Schroeder German joint ... In German-EU-way-apple pie apples aren't pureed/mashed like in US, but (hand) sliced .... I can't make that, but I have 'tonne' of apples on the top of the fridge ...

Two days ago, I cooked mifan for beef-steak and I always cook too much mifan, but I rarely throw food away .... 

 

Today ....

1. 1/2 on-l-ion and bunch of garlic, all finely chopped;

2. pan with oil heated slowly and add no.1 till light brown. Then, turn-off the heat;

3. add 3 pieces of (I think it is) snapper and sautee some 15';

4. clean and cut-slice 6-8 smaller squids, some 700g;

It is very important you buy small size squids, otherwise you'll have 'chewing-gum-tournament' at the dinner table!

5. add squid to the pan with a bit water and sautee for another 15';

6. finely chop some 8 tomatoes and add to the pan with some water and another bunch of not chopped/whole garlic;

7. after all was cooking for some 15' add chopped parsley (a lot!) and 2 dl red wine and cook for another 5';

8. add mifan leftovers and ..... voila 'squid risotto' !

Red wine fits nicely (to my stomach acid) ... I have Bel Air French Bordeaux 2011, today! 

This serves aprox. 4 people ... and if you'll run out of food, just sex more ... after!

You all Non-Italians should stop salivating ASAP!

 

There aren't any churches in China on Sundays, you know ....(so, I don't follow any recipes, just 'feeling' and what is available in the house!) , and I cook , similar as playing a violin without music notes!

Good cooking is a gift! Can't learn that anywhere!

All that stuff can be ordered on taobao including cheese and shipped right to your door. You don't need to bring anything.

Considering that most things can be purchased online from sites like TaoBao, not much. What I miss is diversity of culinary delights that we have in the USA when dining out. I always have to laugh when Chinese tell me that they have a wide diversity of foods here and then proceed to explain that a dish from Chegdu is different from Beijing and different from Guangzhou. No, they are not different, other than the spices they put into them. It is the same rice, noodles, and veggies, just prepared a little differently. Deep dish pizza, quality Mexican food, German beer garden foods, and exquisite Italian food is hard to discover in China. This is real diversity.
