Q: What documents do you need to take to the embassy to obtain the Z Visa?
Do they only require the work permit, invitation letter, and passport photos, or do they also require the original Chinese and English version of the contract?

the more you bring the better. with the chinese, nothing is ever written in stone, and can change from day to day, person to person. bring everything you can relating to your new job. in the end, you will probably only need your invitation letter, passport, photos, and the other docs the school sent you. play it safe though, and besides, how heavy is a few extra pieces of paper in your backpack?
Well I'm not asking to avoid bring extra papers with me, the school has asked me to ask the embassy what documents they need because they have never hired an American before. This is a public high school. The teachers they have had in the past have stayed with them for 5+ years and they have all been Australian or Canadian. So I'm assuming that they think the paperwork and process is different. So they want to make sure they are sending me all the necessary documents so there is no delay.
From what I've heard.. The work permit and invitation letter is the only thing I need from the school.

Like others said you better get a health check from a good accepted hospital to go along with the paper work. Maybe even the security check or FBI.
I'm an American who recently got a visa in Hong Kong. They asked for four things:
1) work permit,
2) official invitation letter (this one is gotten through the government),
3) letter from company certifying you will be working for them on official company letterhead with the red stamp,
4) copy of business registration of the company.
Like someone else said it is better to bring more documents as sometimes in the past they also asked for a health check certificate.

Add your photos and as of 2012, Medical exam was required for Z visa in HK.

1） 营业执照副本复印件一份 加盖公司公章；
Copy of Business License with company stamp;
2） 新旧护照原件
Original Passport;
3） 官方邀请确认函原件
Official invitation letter;
4） 公司邀请信，加盖公章；
Company invitation letter with company stamp;
5） 体检报告（收复印件，验原件）
Copy of Health Certificate (need check original one)
6） 就业许可证（收复印件，验原件）
Copy of Working Permit (need check original one)
7） 2寸彩色浅背景证件照 一张
2-inch photo, 1 pc;
