I was just wondering what would happen if you attempted to leave China on the day your visa expired but suddenly found out your flight was cancelled with no hope of getting a new flight out that day? Are there any special provisions for such cases? Surely they can't punish you if you actually attempted to leave on time?

I exited China in Sep., 2012 with morning flight Tianjin-Shenzhen on my last (F) Visa day. Because of 5 hours flight's delay, I arrived to Luohu next day, early in the morning.
On the Luohu exit, I got oral (English) warning: 'Don't do it, again!'. I had to exit passport queue, and followed officer to her office, where she listened my 'exit delay explanation'.
I advise you to book your 'exit' ticket at least day or two earlier than your visa expire. Chinese officials don't take lighty any visa 'disrespect', in other words 'they won't value your 'exit attempt' with very 'high number'!' You MUST exit before your visa expire.
Stay on the gate side of the airport and contact your airline to fix the problem
You are sort of over the boarder so they aren't going to look for you if you quietly go about your business

Yeah once you check out of china and enter the gate you're in international no-man's land until you go through customs on the other side.
It still sucks because you can't check out and go to a hotel for the night if you have to wait so you have to sleep at the airport like a common hobo but legally you're all good.
From deportation to oral warning, depending on your luck and chinese skills in explaining to Chinese officials.
Talk to the airport authorities. If you can, see if they could write down a brief statement verifying that you had booked a flight out before your visa expired and intended to leave China, but could not due to unforeseen circumstances. Try to get them to stamp it. There is nothing the beaurocrats at the PSB love more than papers with random stamps on them.
You may also try to get your embassy or consulate to write a letter on your behalf saying that you respect China's exit/entry policies and are just so very sorry, blah, blah, blah.
I don't know if you would get off completely with those things, but they could help your case.
Summary Execution. Refuse the blindfold and explain to them patiently that they lack honour. Nothing hurts like the truth.
