water treatment and environmental hazard cleanup companies will eventually make a hell of a lot of money in china. but western companies will be screwed out of the technology, so you need to wait and buy the chinese knockoff company that survives the bloodbath, maybe if their smart , they will list on the hong kong exchange.

The Chinese government don't have the capacity to address the pollution problem, and never will. It is only after the government collapses, partially because of the environment, that the problem will be addressed.
The irony may be that the western companies that taught China how to pollute so successfully will also be the companies that profit from the clean up.
I only can think of food since most other industries have been done to death in China, and their corpses copied as well.
Coffee. I know it sounds like a strange investment with so many Starbucks around, but I think there is still a huge market for coffee shops, and the tastes of Chinese are slowly inching away from afternoon tea and kiddie milk drinks. Outside of Tier 1 cities, a good coffee chain can be hard to find.
Also, tacos and Mexican food is an investment worth considering. Why Taco Bell doesn't exist here is beyond my imagination. If people will eat a freaking double cheeseburger with sausage on top, or a stuffed crust tempura hot dog pizza with shrimp and whatever other god awful stuff is on it, no reason they wouldn't dare stop at a taco stand for a yummy spicy Mexican gordita, or a large plate of beef nachos and a load of sour cream.
Non-food, maybe invest in mobile phone software and gaming. While Tencent is pretty damn huge here, there are millions switching to smart phones the next few years, and the demand for games and useful software in Chinese will continue to go sky high. Movie companies invested heavily here and it is now paying off. I haven't seen much activity in mobile or video games, even though the bans were lifted. People here are tired of shitty Asian style games, and want more stuff like Plants vs Zombies and Angry Birds. There is a huge market here to invest in for the next big mobile game everyone wants to download and play on the subway train. I almost always see girls playing games here on their phones wherever I go, so I know there is a huge target market you can make a killing off of. They love microtransactions, so you don't even have to worry about about pirating.
Just imagine if somebody could develop a way to capitalise on stupidity. This country would be the world's leading supplier.
China needs Go Go bars and strip clubs, they love neon lights. China could make So Cowboy look bad,, call it Nihoa Cowboy. I'd love to invest in one.
Cordless dog leads - the future of China. Every Chinese will want one for their little treasures.
