Does anyone know anything about butchering cattle?

I read that the Flat Iron Steak was only invented in 2002 when researchers from the University of Nebraska spent three years analyzing dead cow muscle in order to find an as-yet undiscovered quality cut of beef. My questions are:

1) If people have been butchering cattle for thousands of years, how would they not have noticed this? Did they not know there was muscle up there or what?

2) What happened to the meat before it was discovered? Just chopped at indiscriminately? Divided between two unrelated cuts? Made into ground beef?


I read this a couple weeks ago and it's really been bugging me.

Oh, and please don't use any complicated butchering nomenclature. I am an absolute beginner. Talk to me like a child who's never butchered.

I would only be guessing but it is most likely that you would need a knife for removeing the meat from that area and it is time consumming so they used that bone for soup or feeding the dog.

ive butchered plenty of livestock but ive never head of the cut.(farm boy not butcher)

According to this article (http://bbq.about.com/od/steaks/a/aa051207a.htm) the problem was that some strong connective tissue ran through the middle of it, but now they have developed a better cutting technique.
