In my stay in Jinan..I have seen some kitchens of Chinese Restaurants..and after that..I stopped going there..the reason..they were very dirty..You guys have some experiences in this..??

I generally come to Echinacities to escape the bad English I encounter everyday in China.
my advice: don't look in the kitchen when you go to ANY restaurant.

oh to answer your question, some restaurants are OK and some not so good.
If we could invent another word for "extremely unacceptably, disgusting"....that's the word I would use to describe restaurant kitchens in this country.
the chinese cooking way has got a lot of oil fumes... so full kitchen has to be dirty with dark brown oil layer on wall cealing whatever...
In general its like that.. same goes if you rent your apartment to a chinese.... i'll never do that... unless the person writes agreememnt that he doesnt cook...
But there are some high class restaurants with neat kitchen.. been to one.. where kitchen was open.. glass wall... very neat and clean...i often go there...
I saw at a restaurant in china/ japanese restaurant run by chinese employers using some type of pan for the food and seems like the trash too.
It really just depends on where I go. There is one restaurant down the street that you can see directly into the kitchen, as the wall is made of giant glass panes and looks right into the dining area. Massive place, employing at any time 30 to 40 people. Pure chaos, but clean as a whistle. Some crews are cooking, some are cleaning, some are prepping; constant activity. The food is great and the beer is always cold.
Another place I go to is a small mom and pop place called "Thin Man's Noodles." It's a dive. You walk directly into the small kitchen to get your mifen, and yep, it's nasty. I mean, in the U.S., this place would never be allowed to open, and I definitely wouldn't take any visitors there if they came to China (as most would take one look and walk out), but this place serves, in my opinion, the best mifen in town, so I go there regularly. Never been sick once.
So, I've seen all kinds of kitchens in all kinds of restaurants, from the ultra-clean to the downright "I can't believe I ate there." As long as the food is good, I'll go back.
Do you think restaurant kitchens in Canada or US are spotless? I've seen rats running around there.
I've seen some real holes in China, places where the entire place is black and yet full of people. That rat would be on the menu.
