Have been accepted to hire in a village I've never heard of in the middle of nowhere in Hunan province. I've never been to China so I'm not sure what I'm letting myself in for. I still I have a few days to accept/reject the offer. Any advice?

It really depends on a lot of factors, one being location, the second being payment for time spent (or, services rendered), also, it will depend on your overall financial condition before you arrive in China. What standard of living are you accustomed to? What are your goals; in other words, why are you coming to China (or want to come). What are your plans for mid to long term employment? Just some things to consider.

Well, ya can't please everyone! But IMHO, Hunan girls rock!
I lived in a small country town for 2 years. No pubs, proper supermarkets, milk, butter etc - I survived and enjoyed the experience. Make sure it has a decent travel link to some city where you can escape for weekends away, once a month or so - we used go to nanjing for beer and pizza every 4-6 weeks, otherwise we were the only foreigners for 50 miles
