May not be exactly what you are looking for in terms of English to Chinese, but I got my start with Pimsleur's Mandarin I and II. It helped me enough to get a good start and have a solid "survival Chinese". Had it "translated" from CD to MP3 and it was great before my mp3 player broke and they deleted the whole file before fixing it (without telling me tht it would be deleted) so I never got to finish II nor even begin III.
I myself am trying to get an electronic dictionary, Spanish/Mandarin for myself and my fiance.
Youdao is an excellent Chinese translator app that has many more features to help her learn English. I use it myself when Google Translate translates something poorly.
It is all in Chinese so you may have a hard time using it but it will be great for her.

My wife uses youdao dict all the time. I also use it when Google Translate acts a bit funky, or I need to translate strange slang.
A Chinese girlfriend/boyfriend who majored in English seems to be the most popular.
Scandinavian:
my wife studied to be an engineer in university, works as well, but for some reason poorly for technical translations.

Have you ever tried Hooked on phonics. You should try that I think they have a chinese to english version. Hey I bet it would help you learn how to read. You could also get those Sony translation devices they sell at the Sony stores.
