New visa will cancel existing visa, and you must exit China for new visa.
Technically no. You really need to be in your home country when you apply for an M visa.
You can go to HK and apply for one, but they seem to be tightening up on this, and if you don't have a HK identity card you will maybe only get a 2 week visa. For longer duration visas, it really has to be your home country.
I think the HK option is really only for business people flying in to make short trips for meetings etc.
However, for a price, an HK agent might send your passport to another country to get you a longer visa. You will probably be able to find agents in China who will do this for you, but then you will have the problem of trying to explain why your last entry chop predates your visa.
Why do you want to change to an M visa inside China? You can't work here on an M visa.

Hong Kong, indeed is helpful for an up to 3 entries, M visa, each entry 30 days, if the officer is in good mood. Unless you get a HK id, longer period of time it possible only by returning to your home country. It's very frustrating, because it adds up so much money, much more than it really worth it.

By now most foreigners have learned that the Y7000 1 year M or L visa renewal gig by sh*t scamming agents who state: "We can renew your visa while you stay in china." Their secret is that they mail your passport to California and it cost only Y2500 or close to Y3000 for that scamming visa agent.
So most foreigners now just mail their passport to their family or send it to a travel agent office in Texas or California and even the U.K, it's the new gig.. But don't do it with only 1 month left, after 1 and a half.
But this can only be done with passport holders that have high class governments.
So mail it and do the renewal yourself, DON"T use a scamming agent in China. Google search: China visa service in California and call them using China Mobile and dial 125900-1********** (the office Phone number). And ask how to start.
Yes I can confirm the days of Hong Kong visa services are all over.
There are only a few long term visa you can get in Hong Kong that a few people can try for, but no all:
Q2 visa (no Q1's, only home countries can get a Q1) - ( family or married to Chinese)
S visa
X visa (Student)
Z visa: BUT the invitation letter most be addressed to the Hong Kong Government.
