Yes, just go to any bank with your passport and the address of where you are currently living. They will open an account for you.

Also, bring a Chinese speaker with you.
Even though Shanghai is quite international, there is no guarantee you will be dealing with someone who can speak a language other than Chinese: you want to be sure of what you are getting.

Sure, you can open an account in big banks in China.  I found a detailed guide. Hope it helps.
