Q: Can a school cancel my residency permit (RP)?
My current school wants to terminate my contract early and are pushing me to terminate my RP as well.

Yes, they can terminate the contract for valid reasons/violations ...
Find out which state org. issued your Working permit and ask them for help.
That org. use to be Foreign Expert Bureau or SAFEA ( ... pre -2017), but that org. was replaced by some other name org.

In worst case, you could contact Chinese lawyer on the link above, and ask him for an advice.
For more information on foreign investment in China and legal consultation, feel free to reach out to Guan Baokui:

Good luck!

First, you sign a contract ... FT (you) are party B ( I think, or it's the opposite ...) and your employer/school is party A, who acts as a sponsor of your Z visa/RP.
Party A hands party's B (your) passport with valid Z (Entry) visa, and other documents (of which one is your signed contract!) to the Foreign Expert Bureau.
Chinese gov. will issue Residence Permit based on the length of the signed contract, usually for 1-year.
Once, contract is terminated by either party, Residence permit will be also cancelled and replaced by short term ( a week, the longest!) Exit visa.
Party B must exit China as per new Exit visa (RP replacement), i. e. before or on the last day on the new stamp.
If you're in a hurry for exit, Hong Kong is a good quick exit venue, because HK is accessible without visa for western passports with 90-days, no Qs asked stay.
