Q: can a school cancel your visa without having your passport?
My School told me that if I don't finish my contract they are going to cancel my visa, if I don't give them my passport they will cancel my visa through the internet. is it possible? thanks

Your visa is tied to your place of employment, so if you don't work for them, you have to be working for someone in order to have a work visa (and vise versa). If you are breaking your contract before it's finished, they are well within legal boundaries to cancel the visa. What did you expect?
Normally, if you decided not to renew and got a job at another school, they would provide you with a release letter which stated that you fulfilled your duties, and could be hired by another school.
So now, you are trying to compound the problem by not giving them your passport? If they know someone down at the PSB, they can probably do whatever they want. Your passport number is on file...
To be technically correct, the school can not cancel your visa, only Government Officials can do so. In reality, if you resign before finishing your contract, what the school can do, you give them your passport or not (and I will never allow my passport out of my sight), is to contact the Labor Bureau and ask them to cancel your work permit (since your documents are tied to the work visa and your particular place of employment), and PSB to cancel your residence permit, and from PSB you will be notified that your work visa was canceled and you have 10 days to leave China legally.
And if you find a new employer willing to take you legally, then will have to apply for new FEC, health certificate only good for 6 months), work permit (tied to new employer) and at PSB for a new residence permit.
and your old employer will not need your passport for doing any of the above, and since you are probably not on speaking terms, I will not let them have my passport at all because I may not get it back.

Think about your experiences at the airport. They scan your passport cover page and take a look at your visa page. I don't think it would be a problem.
if your required to have your passport on your person at all times to avoid the 500 rmb fine , then the school has no reason to keep it and it contradicts chinese law.
most people dont carry the passport , but if you end up dead on a plane, train, etc the government is suppose to contact your country in 72 hours by international law agreements, this is the reason for the rule. your suppose to make it easier for them to figure out who you are by dying with the passport in your pocket for the lazy bureaucrat not to have to do any research to identify you.
