Q: Can you go to HK and back to the Mainland on a single-entry Chinese visa?
Or does it count as having left the country and hence needing a new visa before you go back to the Mainland? I know in the past it was this way, but since Hong Kong is officially part of China now, I'm wondering if this has changed.

the answer would be no, hk is considered leaving china
I think crimochina is right, however, nice thing about Hong Kong is that its one of the easiest places to get new Chinese visas if thats what you are looking for.
Maybe not a great place for a vacation though if you are on a one entry visa.
Single entry, so you entered the country with it once... OH OH! that counts as 1... BUT! K is a magical place and it's DEAD EASY to get any kind or length of Visa your heart desires as long as you have the money...

The single entry visa you entered the Mainland on would have been canceled as soon as you passed customs. When you go to HK, you will pass through customs again. You cannot re-enter the Mainland on that same visa. As someone has said, just go to one of the endless places where you can apply for a new 'L' visa in HK, then return.
True if you are on a single entry L or F visa, then indeed you have used the entry.
If, however, you are on a single entry Z visa that issued into a residence permit, and the residence permit is still valid, then you have unlimited entry and re-entry for validity period of the Z visa / residence permit.
