Q: Can you legally teach part-time in China? Could I still get a visa?
I'd like to work in China after I finish my studies... but I'm worried jobs relevant to my major won't be able to get me a visa. Can I get a visa for teaching part-time so i'd still have time to do internships here?

Yes, you can teach part-time in China as long as you can find an employer who can sponsor you to get a work visa, or Z visa.
You can teach all you want on a tourist visa (called an L visa), for example. But you can't work (that is, get paid for your labor) on an L visa. So, yes, you can, but you probably don't want that answer.
You must have a work permit to be paid legally. You don't get a work permit first; you get a job under contract, then apply for the permit. So it works like this: You contract with a company to do work for them as a foreign expert in some field (China really does have enough labor to do every job in the country several times over, but perhaps not the skillset required) and that company will guide you through the foreign expert maze. Once you have the legal right to be in the country, working, you might be able to find other parttime employment in your (or another) field.
The introducing companies (those who collect eager learners and even more eager teachers, and make matches for a fee) don't ask about your status.
Companies offering part-time teaching positions typically do not offer work visa help and will not sponsor you for such a document.

In order to get the Z visa, it has to be a full-time job. Probably best to get the F visa and that will give you the freedom you want, even though your teaching will have to be under the table, and technically not legal.
