Q: can't find an answer, why aluminum pan no work on hot plate in my China kitchen?

Dumb, but I can't figure this out, I bought a new hot plate and a good tyflon frying pan. , cause the one here doesn't heat and the wok burns everything, . aluminum pan will heat on the old hot plate which is glass top, but the new one shuts off as if there is no pot on it. I thought because the high spots on the pan were painted, so I scraped and scrubbed the paint off,,  no luck, an aluminum pan won't work on this hot plate. can anyone explain this?

I had the same problem.  I think its too do with the metal in the pan.  The hot plate only works with pans made of a certain substance or containing a certain metal.  Maybe I'm wrong but mine only works with the crappy pan that came free with it.

Maybe they have to contain a magnetic element like iron, nickel, or cobalt and then the hot plate can sense it.    Its certainly not to do with weight or surface area because I tried that.  I'm pretty sure the pan that came free with mine is slightly magnetized to the hot plate.

Ted, many hot plates need carbon content on steel or iron to complete the circuit and be able to work.  Aluminum has no C in it, also some SS with low carbon content will not work either.

When I arrived in China with my aluminum expresso coffee maker, I went to Gom'z with it to buy a hot plate, connected over 20 and none worked, until I found one that did and bought it.  The hot plate will heat when it senses carbon sitting on top.  If it does not sense it, thinks there is no pot and will not heat.  

If just bought the hot plate, take it back to store with box and receipt, and ask for an exchange for one that works with the aluminum pan.  If they will not, get yourself a bigger pan {or flat plate}(non aluminum) and put that between hot plate and your aluminum one and now will work.  Make sure the bigger pan {or plate} attracts a magnet, otherwise it will not work.

i had the same problem also; if you choose a hot plate with induction heating, only iron and steel pans will work..

I just checked on Baidu.  It has to have a megnetic element in it.  The hot plates generate heat from electromagnetism.  Their real name in chinese is actually electromagnetic cooker, (i thought it was just electric cooker and thats what most people call them).   Make sure you buy steel pans because aluminum ones wont work.

 

There are some hot plates imported from the west that are just hot plates.  But seen as though your pan wont work, it seems you;ve bought the electromagnetic one.  You could take it back and find the imported hot plates.

thanks guys,, hot plate came with a cheap stainless pan big enough to put my fry pan in, plus if I add water, maybe nothing will burn, like in a double boiler. The old wok burns everything and is so out of shape.
