Currently my application for a visa is being processed for a position as a PE teacher. Recently a different employer offered me the same role at almost double the salary. I feel bad for wanting to change but it's too good to ignore.
The visa for the original position is being processed at the moment and should be finished in a fortnight. Is there anyway to cancel it? Can I say a family member has got ill and cancel it. Apply for a visa with new employer?
I could not find a clear answer. Apologies if it has been asked before

Are you referring to your Z visa application? Have you actually been to the Chinese consulate/visa centre & applied for the visa?

The clearest answer is 'no'!
After you signed Contract, School applied for Working permit and Invitation letter at SAFEA (Foreign Expert Bureau).
If you'll excuse yourself as not being able to respect signed Contract, and you'll sign Contract with another School, your new School must go after the same process at SAFEA.
I don't think, they will be successful with new WP for you.
It's better if you believe, there is a record at SAFEA.

I don't think so. Chinese have computer database. School applies for WP by your name. They also have photo page of your passport.
I'm not into that much, but they certainly hold the records of foreigners in China.
It's your first job in China, and everybody screws up in the start. You'll learn more as you go.
I think it is possible as long as it's in a different province...
