You must get Release letter and Cancelation certificate of Foreign Expert Certificate from your present School.
New School will extend your RP and apply for new FEC with above listed documents a week before RP expiration date.
If you leave your present School without two docs., you must exit China, and apply for new Z visa in your home country (or HK, if you're lucky).

You should resign professionally from your current company and get a release letter and if possible keep a good relationship that way they don't cancel your residence permit. Most companies will not cancel it anyway but you need to release letter otherwise you'll find it hard to get a new Z visa..
