I guess I should be a little more specific in this question... Is it possible to reserve a room for a night or for a week without shelling out a deposit or giving them your card info?

You would have to be crazy to give them your credit card details over the phone, just book it and pay in cash is quite okay. Let them know that you really want the room by emailing a few times and try talking with someone. BTW it has to be a hotel that is for foreigners so you can be registered by the local police

NEVER EVER give any personal financial details to anyone EVER in China. If your employer or someone you are doing business with uses a certain bank, use an account there so they can deposit your pay/agreed sum and then immediately transfer to another account.
NO F-ING WAY will I give my CC number to any hotel in China unless it's a western chain, and even then, only in person.
Its happened to me a few times,even when you check in they take a deposit off your card which they cancel when your stay is finished and your room as no damage
When booking online, use a China based website (I find chinahotel.com works well...check out the link), and you can reserve the room with no credit card. Once you check in they will put a pre-authorized hold for the room rate for your stay and some extra for things like room service or mini bar. They always cancel the hold when you check out and pay, and I have never had a problem. I stayed in many different hotels for 6 months in China.
The hotels will hold a room, With a credit card they say they will hold it even if you arrive late. I did not use a crdit card to hold a room. I might want to change my mind and if they have a deposit, then they keep a day for not cancelling ( a week ?? ) early.
Most hotels post a price, the real price is at least only 30%. Thats what I paid. I used China Tour. It had the best prces I found. Included breakfast I found were much cheaper in reality than the package price. Sheridan posts $23 each, but is realy 58Y ($8.78 ).. like I'm gonna pay $25 for breakfast, my waitresses would have to be wearing my breakfast.

book through elong, and skip the hotels that require cc info. and pay the hotel in cash. trust me, when you go home and check your cc statement you could find that they over charged you and there is nothing you can do
