I mean things like, I am breaking up with you, or I don't love you anymore. or even little things like, I am not hungry. Is this a Chinese thing, or just a girl thing.

I had a gf who thought it was ok to say 'I hate you'... yeah, that, in my books, is a complete no-no!
So, when they do this, it's definitely time to sit down and have a long discussion about lines. There are lines that are never to be crossed.
So, if she says "I want to break up with you", then "ok... bye... lots more like you out there... not so many of me :D".
(I've been single for a long time, and I don't put up with that sort of shit!)
I am breaking up with you = I want more attention from you
i don't love you anymore = I need money
I am not hungry = in need of loving attention
its a Chinese woman thing....go figure
It's not that we take things literal. It's that these statements are blatant lies and pleas for attention.
For example...
I am breaking up with you = O.K.. bye.
I don't love you anymore = Then leave.
I am not hungry = Then I won't make/buy you food.
I think it's a woman thing, not just a Chinese woman thing. Girls either say those things to test you or because they want them to be true.

It's a woman thing, but in China some girls take it to the extreme. Woman everywhere have their own language that shouldn't always be taken literally. We are expected to learn this language and act accordingly. This is not new to China. I agree with Shining. If she goes too far and says she wants to break up just to get a reaction out of me, my reaction would be, ok get out.
it's not what she says...it's what I say.... I am just a bit goofy and sometimes cynical...I say thing that she takes as "truths" ... then I just call her stupid and explain that she should know all the English "bullshit" phrases...........then we kiss and make up, usually after her work day, when I have prepared a delicious 2or3 course western food meal for her and me.
she won't eat the vegies unless they are cooked.... so more for me, and she settles for a bowl of white rice and a chicken wing......I eat the rest.
well i have heard those words more times in my six months relationship than in someone's lifetime!!! well especially if u r mei you qian laowei its a common ordeal for u.
serious talk every time including by complain, regret for not chosing hen duo qian laowei/ chinese guy i guess here almost everything depends on money!
if u take ur gf nice resturant to have dinner everyday, followed by weekend holiday on suzhou, sanya, xiaomen everyweek and ofcourse expensive gifts to brag about with her frens than im pretty sure u'll never hear those words again in ur life!
My wife has never done ANY of that.
My first Chinese girlfriend did. That's one of the many reasons I left her behind. She's begged for me to take her back 100+ times. No.
