Q: Do you say "thank you" to fuwuyuan, ayi, taxi drivers etc.?
I did this out of ignorance when I first got here, stopped doing it for a few years to better "fit in", and now started doing it again recently, local customs be damned. I personally find that it puts me in a better mood, and I've grown to hate the way that fuwuyuan, ayi, drivers and the like are treated here. Pipe dream or not, I hope that my thank you helps a little bit.
Do you say "thanks" to people or not? If not, what are your reasons?
Do you know any Chinese that buck the custom and are liberal with their "thanks"?
I always thank the cab drivers and service staff. My wife gives me a wierd look every time.
Yep. Sure do. Especially the service staff in restaurants!
I always do especially to the taxi driver. He gets me where to where I want to go a lot faster than a bus would be able to. I don't have an ayi but if I did I would thank her everyday just to be on her good side.
Whenever the fuwuyuan brings me the dish I thank her as well. I have no reasons to not thank anybody. It's in my religion to be nice to others and do onto those that you would want done on you!
Absolutely not! I generally spit as I toss their money at their feet and hoof them casually in the crotch.

Difficult? Moi? No, the truth is i'm extremely rude to anyone in a serving position, so as not to appear patronizing.
Always. It becomes habit. My parents always taught me this point since I was little, and I bring it up wherever I go.
So not only thank you, I also say hi, goodbye, take care or other greetings to ayi, driver, fuwuyuan, shouhuoyuan.
if they are nice to me
but if they choose to not talk to me at all (taxi drivers...) or throw they food on the table with a shit face on their hade (fuwuyuan) they i rather prefer not to thank them 
I do, and they always give me this smile that says, "oh, what a strange-but cute-girl".
