Everyone assumes I'm American, and every time I say that I'm not, they look a little shocked. But do you ever tire of explaining that you are not. Sometimes I just want to say 'fine I'm American' but something stops me (the teachable moment I suppose).
I do the same thing well people yell hello at me, sometimes I like to reply in different languages. Not all of us speak English! (though actually in my case English is my mother tongue)
i know that most chinese people are unable to distinguish different accents:
we are all 'foreigner' after all
but sometimes i am too tired to say where i am from - native english speaker but not from America, Canada, England, Austraia ...........
So if they say 'are you English?' i say 'yes' - it is easier

Then they're probably feigning ignorance just to diss you. I can envision people pretending to think I'm an American just to tick me off, too.
They look shocked because they're never wrong. You are American! Revel in it.
Nope, I never have to say I'm not American.
I've never had to say it. (I AM an American.)
As far as the "hello" thing, why even respond? The whole point Of it is to get you to respond. Just... Keep... Walking.
I'm tired of having to say that I'm not a Xinjiang Muslim / Thief.
I'd just say, "Why do all you Japanese think Westerners look alike?"
