What job are you talking about? Bar tending? Manager? Foreign Money that smiles and drinks with the VIPs? (if you're hoping for the latter, go to somewhere other than a big city)
Tips aren't a big thing in China and jobs like that the workers usually rely heavily on big tips. I don't think they pay much per hour either. You would make more if you were to become the manager of the bar rather than the actual bartender, busboy or waiter/waitress. If anything try to find a bar that customers will tip. The best way to do that is to go in and have a look see how the service is and how much the bartender or other employee is making. I've known people to ask bartenders how much they make and a lot of times they will lie to people just to make themselves look good. Don't take their word just find out for yourself by observing how much they make.
A chinese place will pay 2,000. A foriegn owned bar around 3,000.
When I did, I was 18 and inexperienced. I was promised "a few hundreds", but didn't get paid at all (the owner acted as if he forgot or tried to avoid me when he was there). So I drank like a hole, gave away more than half his alcohol for free, and disappeared. My girlfriend then worked there, was promised 1000, but was denied it at the end of the month, under the excuse that "she was going to leave if she got the money". She left anyways.
So when it comes to working in a Chinese bar, unless you REALLY know the owner, I advise you stay away.
A friend of mine worked as a bartender in a French bar/restaurant (Cafe de la Poste), and got paid around 200 yuan a night, with free food and alcohol, and DID receive his salary, so I assume it'd be safe for you to carefully pick your bar, preferably one owned by a westerner...
