Q: easiest way to transfer a lot of money to uk

I'm about to sell my house in Shanghai into RMB - as this will be a lot of cash has anyone done anything similar and then transferred the money back to the UK, or another country?

The most you can wire in one day is $500 USD, you have to convert it to pounds (in your case), and then you can transfer it. The most currency you can get in one day is $5000 USD.

If you have a Merchants Bank card (my case) I can use it in Australia at ATMs, as it is a Union Pay linked card. This might be the best way

There is no easy answer as it is very hard to get a lot of money out of China. Even if you have your currency in cash when you leave, you are restricted by how much you can take out of China and how much you can take into Britain.
Anyway you look at it it will cost you, whatever you do don't do something illegal as you may loose the money and or get put in goal.
You might be better to see a lawyer or someone who can help you with the Legalities!

It doesn't matter what you try to do, you have to do the paperwork, supply your passport or Id. Just be carefull taking advice for your adventure. Most countries like your money to stop within, not be taken out!
