3. I've thought about flying from Bangkok to Hong Kong/Shenzhen,etc. and then taking a train/bus to Shaoxing

I've flown once from Macau -> Bangkok -> Macau.
Air Aisa is not an impressive airline, but when I went, they had the best price (as I remember the time of day was a bit crap on the way back)

Macau Airport is pretty easy to access. Just need to get from airport to either the Outer Ferry Pier or to the border to Zhuhai for high speed train onwards. (or slow speed bus) Both busstation and trainstation are right next to the Macau border.
Air Asia are okay for a budget airline & they fly direct from Bangkok to Guangzhou. I've also flown with them from Macau to Bangkok & Chiangmai. The biggest problem with Macau, which Scandinavian hasn't mentioned is the border crossing at Gongbei, bloody 2 hour nightmare if you get your timing wrong! I prefer the Wanzai ferry crossing or the roas bridge into Hengqin but both of those then require a taxi to Gongbei to get the bus or train.
Scandinavian:
Wanzai is "nicest" because the short ferry trip is actually a nice little break from noisy taxis and busses. The Gongbei border however, I have rarely, in recent times waited more than an our to cross. You have to hold it up against the similar experience in Hong Kong. Last time I was there I called my wife from the Macau side of the crossing and was home for dinner an hour later, this includes two passport checks, a bit of walking, finding the car in a carpark and racing through the city.
Hotwater:
I wrote you a long reply earlier but my internet failed & it got lost in the ether....
My order of preference now from Zhuhai to Macau & return is:
Hengqin (Lotus Brudge) - very quiet border.
Wanzai - not too busy & chilled ferry ride.
Gongbei as a very last resort. Nice to know it's got quicker. My last two times took 2 hours in that hellhole of a hall.
My mother was on business in Bangkok about a month ago, and flew to Guangzhou with Thai Airways to visit. She said they were okayish. I think she paid £160 one way.
I flew from Bangkok to Beijing last month on Air China. Really not bad and well priced, also much better service than the domestic Air China flights. I used Air Asia for short distance flights around Thailand, but wouldn't want to sit in their planes for longer than 2 hours.
I flew Guilin to Shenzen, got diverted to Guangzhou, round trip about 1000Y each. I took GF, she said it wasn't worth seeking comp for detour. The flight to BGK was out of HK. I told her I knew how to get to HK, bus or train because I had looked at this way. She spent hours yakkin with other women and ignoring me until she decided to split a taxi with another woman to HK. We went taxi, van, taxi, cost more than the flight just for half the bill. Crossing the border involved too many stairs and walking. Seemed like we crossed twice ( timbodong) the van crossed, vans drive across, no walking.
I think I used Chipmunk to get an Emirates flight HK to BGK 1700Y return.
Coming back stayed in HK for a cpl days, a bus stop was outside my hotel, bus to border. Border crossing was just get off bus and walk through a terminal, back on bus.
Don't remember bus fair, cheaper than half a taxi.
