I read that there are a few places, mainly in the suburbs, where one can go horseback riding. Given China's poor track record of animal treatment, I'm a bit reluctant to go. Have any of you ever gone? Was it actually ethically okay?

I haven't seen it in Beijing, but I've seen a horse place in Zhongshan in a TV studio that doubles as a tourist attraction (young couples goes there and have wedding pictures taken in front of different sets) You can get a horse carriage ride around the area. The horses coats have bare spots, they are incredibly thin, then are dragging tourists around on concrete streets with bare hoofs. The "drivers" seems to take a bit much joy in using the whip to speed up things so they could go faster and get the next load of ignorant tourists.
I wouldn't give such an establishment money.
If you go, bring a carrot for the horse.

Reminds me of the horse rides in Kunming. Uh, I have no idea why horses are supposed to be up to my waist. I thought they were taller than that... I did get kicked in the face by an elephant, though.
It wasn't strictly horse-riding per se, but I did date a girl with seriously big teeth in Beijing once, if you want her number.
I like to make 'animal sounds' whilst engaged in the act of coitus (horsey-style?). Does that count? (in my favor, it was in BJ). I never thought of her as a horse though, I'm more into the 'feline' fantasy.... I have had a few female-type individuals tell me 'nay' before...I'm pretty sure it is horse language.... neeeeigh,,, neeeigh,,,,, neigghhh... followed by a swift kick in the 'nads....
Yes, there are places out in the suburbs like Shunyi where there are reputable riding stables. I know people who regularly send their kids there, and I hear they treat the horses well. Check out places like Equuleus.
