Im going to South Afrca for three weeks in December. How does this affect my visa?

If your not changing jobs or visas and just taking a mid contract holiday it wont effect anything. Your free to come and go as you like.

You don't have a "Z-visa"....that was a 1-time use single entry visa that allowed you to get your residence permit which is what you'll have now (I'd guess of 1 year duration). Leaving China for 3 weeks will have absolutely no affect on it.

It used to be unclear but I think they clarified the purpose of visas/RPs last year. A visa is what you get outside of China, and it means a consulate or an embassy has verified your profile and declared you clear for entry in the country.
A Residence Permit is what you get inside of China, at the PSB. It means the local authorities inside the country have verified your profile and declared you are not a visitor anymore but a resident in the country, opening you a larger set of rights. Now, China doesn't have a lot of rights to begin with, which explains why you might not really see the difference, but in some countries regulations might be different. Most countries in the world have this distinction between visas and residency.
Z visa changed to Resident permit in 30 days after you entered China.
If your RP sponsor (School) agree you can take leave, you can exit and reenter China as many times as you want.
they will rip your passport and FEC on airport, lock you in the room for another weeks without shower and with la mian 3 times a day. than you will be able to work in china again.
If you have already completed the entire Z visa process then it doesn't affect your visa, unless you are breaking your contract, and your work place wants to fire you.
If you have only done the first stage, where you get a temporary permit, you then have 30 days to convert it into a Z visa, and then you can come and go as you please.
