My contract doesn't end for another six months but I'm worried about when I leave how it will effect my Visa. Will I have to go to HK for a few days to get a new visa? I want to stay in the country and as my contract doesn't end until mid September I'm worried that any of my first choices will want me to begin right away and I won't have time.
If anyone can help or has experience of this let me know,

If you're working at the School, you'll need Release letter and FEC Cancelation Certificate. School must give you this 2 docs. in 30-days after your last working day (Chinese Law).
If you plan to finish your Contract, you should look for new employer/Residence permit sponsor first.
Once you have new job, your school will be able to extend your RP with this 2 docs., and you don't need to exit China.
Before the end of the Contract, old employer must take you to PSB/police, where you'll get 30-days S2 visa, which is issued to give time to your new employer for extension of RP, or give FT time to prepare for exiting China/travelling.

The last part of your answer is pure rubbish! An S2 visa is a family visit visa! Please get your facts right mate.
If if you don't have enough time on your RP to complete processing the new FEC/RP then you'd get a tourist visa!

I got 30-days S2 visa in Fujian (Aug. 2014). I was dismissed by School, and all procedure was in the known of Fujian SAFEA.
SAFEA told me, these are Fujian Gov. regulations, and I must comply.
I argued with SAFEA that cancelation of RP isn't necessary as it was case in Liaoning. Only difference between Fujian and Liaoning was I quit Dalian school, and arrived to Xinjiang with RP from Dalian. 10 days before ending of Dalian RP, Xinjiang School extend it.
30-days L was common after RP expiration, but not in Fujian. I was guessing, these are changes in RP procedure.
If you can couch me how to post pic here, I can show photo of S2 visa page, and I'm single.
RP usually ends in the same time as Contract. In other words, you must be in the classroom just before RP expiration, so you get 30-days visa to move to the new post or leave China.

It didn't look to me as 'cut corners', more like a 'change' to 30-days L, which use to be granted at the end of the Contract. It's just different visa name, everything else was the same. Stamp, duration of visa, wait 7-days for passport return. I've never looked, what kind of visa is S2.
What sort of visa are you on? Assuming you're on the usual Z visa / RP deal that visa is tied to your employer and when you leave the new employer needs to arrange your new visa.
Also, shouldn't your visa expire around the same time as your contract?

I'm on a z visa, so I have 30 days to get my new visa sorted when I begin the new job yes? Thanks so much for your answers guys!

Your School must take you to PSB in 30-days after your arrival to China, to convert Z to Residence permit.
You have RPermit, if you're working at the School. Your Z isn't valid anymore! It was replaced by RP.
Before you'll finish your Contract, PSB will issue 30-days L (or 30-days RP extension), so your new School can extend your RPermit and apply for new FEC. You don't need to exit China.

the contract that submits to the labor bureau doesn't have to be the same with your real contract with the employer. you need to check your contract and your resident permit expired date .
If they are the same and you don't wanna work with this company, then you have to do the visa and resident permit all over again. If not, the former employer should cancel your current work permit and shift to the new work permit and resident permit under the new employer's name. Then you do not have to leave China.
