Soon I will exchange a nice chunk of RMB into Yen. I plan to exchange most, if not all of it, at the airport in Shanghai. However, I heard that if I keep receipts, I could get whatever's leftover exchanged back to RMB with little or no fees. Is that true? Or will I have to deal with normal fees anyway?

Do you have a union pay card it would be much safer?
Please be careful, there is a Chinese regulation effective at banks that you can only change the equivalent of $ 500 US dollars per day into foreign currency. It does not apply to Chinese. Make sure whoever will do the eschange at Shanghai airport can do it all the same day.
Will it be safe to carry a large sum in cash with you to airport. As suggested, I can do exchanges charging it to my UnionPay Bank of China debit card. and yes, I heard the same as you, but never done it. Save receipts just in case, and please let us know afterwards
