When you leave your Z visa (residence permit) is not canceled by your ex employer (you negotiated this way) what would happen to me in terms of my status? If I am not employed by anyone and doing just part time job (cash) can I live like that till my Z visa expires or? Or should I leave and get tourist visa and risking with part time job or what? What are my options?

Yes you can live here on your resident permit but as icnif said, you'd be working illegally. Same as if you changed to a tourist visa.
Z visa expires in 30-days after you entered China and get replaced by Residence permit.
RP isn't necessary canceled, if you didn't commit grave Contract/Chinese law violation and if you received Release letter and FEC Cancel Certificate, RP can be transferred to the another employer.
If you work part-time under valid RP, you are illegal, doesn't matter if you have (new) RP sponsor or no. You can legally work with RP only with sponsor/employer as 'full-time employee' with FEC. If you change employers under RP, visit to PSB with new RP sponsor is a must and new FEC reissuing.
I guess, you can remain in China without all that, but you aren't entitled to work.

Question, did you get your release letter and expert certificate copy that was cancelled ? If not, your out of luck. Gotta leave.
You can stay here under your Residence Permit (visa in your passport) until it expires, but without a Working Permit (booklet) you will not be entitled to work legally.
Though honestly, this is China and legality should be the least of your concerns.
