We are wholesaler's based in Canada (in Ontario). We're interest in importing APPAREL, DOLLAR STORE ITEMS, FURNITURE AND FURNISHINGS, LUGGAGE, BAGS AND SHOES, OFFICE AND SCHOOL SUPPLIES, FASHION ACCESSORIES, JEWELRY, BEDDING SETS AND ELECTRONICS (CELLS, CAMERAS, SMALL HOME APPLIANCES). Which cities are the best in China for each of those items (Quality/Price). Except Guangzhou and Yiwu what are other big wholesale markets in China and what are their specialty? What are some differences between Yiwu and Guangzhou and what kind of items does each of those cities (Guangzhou and Yiwu) specialize in?

One of the best ways to see which regions in China specialize in particular manufacturing is to search for the product on alibaba.com
You could actually find a supplier on the site, but I recommend just using it as a starting point. You will get much better business first face to face dealing in the beginning. You can use the website to see where the companies are located and even use it to arrange a couple of meets/tours during your first trip to the area.
