I'm mid twenties about, with two years working experience, which should be enough for the visa.
I hear only people in business or engineering related fields even have a shot at getting non-teaching jobs in China???

It's possible, just not common.
Reason being, 10 years ago, if you spoke a little Chinese and you were a foreigner, you had a myriad of opportunities open to you. Now, mumbling a few words just doesn't cut it anymore. More and more foreigners are fluent.
Which is why with the language barrier progressively going down, if you don't have a fluent level in Chinese, you'll either be restricted to teaching, or to those high-end jobs that either don't need so much language, or are so technical they can afford to bypass it.
If you want to get a non teaching job, best is to look from elsewhere than China. Expat are usually sent from their respective countary, not hired in China. You need good network, but not limited to China, so you get job in hope to be sent there. If you do good job and speak fluent Chinese, it's easier to get sent as an expat, and not teach.
It's not uncommon to hire from China itself, it's just less frequent
I have had several opportunities to work for Tech. fields, the problem was, it was for Chinese companies and the pay was good for Chinese but horrible for expats, longer hours, no apartment and limited help with visa issues. I tried foreign companies but all responded that they hire inside the company, the employees they do hire inside all have 8 to 10 years experience in a certain field and all their experience was directly related to that company.
Chinese Law states, all expats employeed in China must either be for Business on Business visas and cannot be paid in RMB, ESL teachers, or Managers with 8 to 10 years relative experience with a higher degree.
No foreigners will have the ability to fill a job opportunity that a local citizen can fill especially in regards to the unsurmountable numbers of undrgrads they have each year.
Find a good school, you can make good money, international insurance for you and any direct family, round trip air tickets for you and your family, an apartment and visa issues handled and paid for by the school.
