I want to know if I need to show any documents or to pay extra fees regarding sending jewelry to China via couriers.

Generally gold is prohibited from being mailed, also it might ''get lost''.

I correct myself, it is permitted, from USPS to China : Coins; banknotes; securities payable to bearer; traveler’s checks; gold, silver, platinum, manufactured or not; precious stones; jewelry; and other valuable articles, unless sent as an insured post.
My experience has been this: mailed a set of two wedding rings [gold and diamonds]
to China, and there was no problem. They arrived within 8 days of sending via insured mail.
However, at some other occasion a gold necklace 'became lost' even though insured
as well.
I gather, it all depends...
It's small enough just slip it in an envelope with a letter and they would never know. Just make sure you stick the ring in between the piece of paper so it's not noticeable visible to the eye. You don't want somebody discovering you have a ring in the envelope they might open it up and give it to their wife and say they bought it. And after that they will let you claim the money for the lost goods. Doesn't affect them one bit unless they get caught!
