Q: Is it still possible to convert F visas to Z visas in Hong Kong?
I know it's not recommended, but is it still do-able?

nope, you can not. first you have to finish the employment permit, invitation letter to HK to apply for z visa. then you can convert whatever visa you had into z visa. Then you come back to china for work permit and resident permit.
I was told you need to return to your country of origin. Is this true or can a run to HK or anyplace out of China be acceptable?

in almost all but the rarest cases you will need to go back to your home country to change your visa from L or F to a Z , if you currently have a Z visa and are renewing or changing employers you shouldnt need to go back. Just to change the type of Visa to a Z
