sorry i dont have much experience when it comes to this because i teach english and most times the job is given so quickly, in 1 occasion the pulled out a contract within like 3-4 minutes but refused to let me take it home, the thing was like 20+ pages i wasnt just going to read it and sign it on the spot, i had a quick glance through it since they refused to let me take it home, and there was 2 whole pages about how they could fine you  for lots of different things and take money from my wage and thats when i walked out, just be careful and have a chinese friend look at the contract and ask if it seems normal

A good interview will be the obvious questions about work experience, whether you have worked with kids or adults (if teaching), your educational background, why you are in China or wanting to go, and your availability.  Some schools will at this point either have you do an on-the-spot demo of teaching, where they hand you a couple textbooks and have you prepare a 10 minute lesson, or might have you come back if they liked you and do a demo in front of real students.  Demo's suck, but if you prepare a lesson in your head before the interview, you can easily fill the short amount of time with your demo lesson.

 

If they seem to not care what your answers are to interview questions, and they quickly skip through the questions to get to the contract part, or want you to start immediately, that is red flag they are desperate.  I've had an interview for a kindergarten where I could have told the interviewer I hate kids, and I never worked a day in my life, and they still would have hired me because of my nationality.  She didn't't take notes, just quickly read the required questions, checked a box, and pulled out a ridiculous contract I refused to sign.

 

If this is a non-teaching job, expect interviews to be the same as in the West, only it is likely the interviewer won't understand all your English so may not say too much.
