There's a spicy sauce, with the head of a I-am-not-jocking-around woman on it (took me years to know if it was a woman or a man) : Lao Gan Ma. I'm addicted to it since years. Am I the only one ? How do you consume your Lao Gan Ma fix ?
i take a spoon full and slowly heat it up with a lighter. then, i take a syringe and careful suck it up into the needle, careful not to get any air bubbles. i then, directly inject it into a vein on my foot, so nobody can see my addiction marks. or, i add it with tofu and soy bean sauce and steam it for a bit. i know it sounds a little bland and plain, but actually is really delicious and very easy to make. try it out.
No way it's a woman, I always assumed it's a man with a bad haircut !

"On the Lao Gan Ma pots, it's a man or a woman face ?" I had this debate with a lots of Chinese friends. Before living in China, by the look, I would say, a man. But all my friends told me it's a woman. Then, seeing some old countryside ayi with short hairs and tanned skin who are not exactly symbol of feminity, I can believe it's a woman.
Yesterday my wife added some into her fine-even-to-me dish of chinese noodles in soup. The whole thing began to smell like acidic rotten vegetable garbage.
Yep, nothing like the 'old dry horse', I love it. My favourite take-out at the moment is 'lao gan ma wu hua rou fan'. Yum yum, tickle my bum.
What is lao gan ma?

It's a fairly spicy sauce with (I think) soja beans. You can use it raw, to flavor rice, to eat with fresh raw cucumbers, in a salad dressing, or as cooking sauce.
I bought a bottle today. I had it before in Shijiazhuang at a dumbling shop. It was so good.
It's the best sauce I have had since the Jamaican jerk sauce.
