I want to know how and why Chinese choose their English name, so long as the names are interesting ?
My friend' s English name is Fox. I found it was interesting. Can you tell me more interesting English name and the reasons why they choose them.

As to why they chose them - I can't even imagine. Perhaps they are admirers of mass murder, supernatural powers, and retardation. Or shouting, preaching and running. Or silly moustaches, wavy brown locks, and boxes of chocolates.

Perhaps the middle guy just had an exasperated teacher who just reacted with, "Christ!" whenever he opened his mouth, to the point where it became his name.

Well I guess they all like meat, of some kind...
One student had the "English name" Dragon Man, chosen because it was a translation of his Chines name (Longren). At least I think so... perhaps he was just bitten by a radioactive dragon, and a dying Ben Shushu told him that, "With great power, comes great responsibility."
There's also a Stifler, presumably from American Pie. Best part is Stifler's last name is Wang.

Usually with a great deal of ignorance. Either a) a teacher gave them their name many years ago, and they just stuck with it, or b) translating their own name, c) they found the name in a book/movie/TV series, etc, d) they found a word they like that they think sounds cool.
However they got there 'English' name, usually there is no attempt to find out how well it will be received overseas. While most names aren't particularly unusual (so many Emma's, Tom's, Steve's and Jennifer's) - there are obviously those that remain in the memory - the one's that make us cringe and laugh (not always on the inside... I always laughed when I had to call the roll, and got to "Banana")
Personally, I like interesting names, and as such, have given a few... Arwen (someone named "Wen"), Sapphire (not really a pole-dancer name! ), Sheridan, Angelique, and Charis (though some have thought it should be 'Chairs'... too funny! It's actually an old Greek/Welsh name).
Slight changes to an 'ordinary' name can make a person more unique ... as I said, instead of 'Wendy', Arwen. Instead of Sheddy - Sheridan. Instead of Helen, Helena. Instead of Angel, Angelique/Angelica.
Changes to spelling also have a slight change in effect... Emily to Emilie, Mary to Marie.
Some of the highlights in terms of students names right now are:

With the exception of one (guess which) they are all girls. These more funny names tend to come from a combination of wanting something that sounds unique and general ignorance as to the actual meaning of the word.
Mega and Shooter may also be big fans of video games. Who knows.

Seeing as how they are all in the same class, I might put them together in one group and see whether they develop any desire to become serial killers. Or not... don't want to get into too much trouble.

They choose names that 'sound' Englishy. Perhaps due to the exotic syllables or consonants.
Also, they avoid names that could be misheard and made fun of in Chinese (but they don't care how ridonculous the word is as an English name). Given Chinese has simple syllables, this makes a wide range of good names off limits. A name like Ethan would be mocked for sounding like Yi Sheng [doctor], though I'd say they aren't that similar.
Finally, if the person is young, difficult sounds are also avoided. And after years in China, I'm still surprised how many simple names are labeled 'too difficult to pronounce'.
I was always expected to come up with English names, so I'd jus go off whatever I was watching/reading. I'm re-reading GoT at the moment so if I were in China there'd be a new generation of Cats, Robbs, Edds, Aryas, Jamies (yes I know sp) and Danys running about.

Yep, Cat for Catelyn, and there's room for a Tyrion, although I'd be dooming the kid to a lifetime of not being able to say its namr. Drogo, yes, Cersei, no, she annoys me too much. I could have a Tywin though, he's a badass.

Sam's sure, and Jon, too. Varys no (just imagine the poor kid when it goes to study abroad or wants to work in any professional capacity). Pod, why not? Dario, yes, I'd shorten Oberyn to Obie.
No bloody Sansa's, that character is so insipidly annoying, just no. Shae's such a pretty name, but I'd feel bad naming a kid after a prostitute. There's a million names you could use although some would have to be shortened for pronunciation purposes: Margaery, Tommen (Tom), Ellaria (Ellie), Bran and Rickon (Rick), Stannis (Stan), Mellisandre (Mellie), Gilly, Missandei (Missy), Nym, Meera, Trystane (Trys), Tommen (Tom)... it'd take me months to run out of names for kids.
I had a boy called Hawker...I asked named after the Aviation Engineer? He said yes, as spitfire was too silly.
