As for the second... you can NOT do any paid work while in China on a business visa. (where the payment is from a Chinese person/company directly to you)
No, you shouldn't enter China with M visa, if you plan to work.
M visa is business visa, which doesn't entitle you to work and receive salary. It is much easier for Co. to obtain M, because Co. doesn't need to be authorised for foreign hire, what is requirement when Co. apply for Working permit and Invitation letter, both docs. needed for Z visa.
If you'll enter China with M, you should exit China again to get proper working visa (Z). If your Company is influential, they might be able to get Invitation letter with Hong Kong pick-up.
If HK Z pick-up won't be granted, you'll be required to return home, and apply for Z at Chinese Embassy in your country.
Since M is wrong visa to work in China, you put yourself in a mercy of an employer. You can't expect help of Foreign Expert Bureau (SAFEA), if you're in the country illegal.

Yes, it does! Every Co. (school) must be authorized for foreign (teacher's) hire by Chinese Gov. (SAFEA).

Change 'School's level' and 'Province' parameters, however I'm not sure how can link be any good, if it's not updated.
I'd suggest, you dial Provincial SAFEA instead, and inquire about particular School's authorization.
