I can still eat eggs and dairy (not a vegan).
I don't eat most meat myself...just birds (mostly chicken and turkey), seafood and dairy. Because of my diet I mostly stick to veggies and tofu here (chicken is not great and no turkey to be found, duck is ok and I don't like pigeon) and have not had much problems.
There are tons of great veggie dishes in China and tons of different kinds of tofu which will sustain your diet. Not much dairy here, but they also have alot of egg dishes and most soups are just veggies and eggs.
The only hard part is that many great veggie dishes come mixed with pork or other meat, so you just need to make sure to tell them to make it without.
I think that being a vegetarian in China is a blessing as you are not forced to eat all the strange meats the locals try to get you to try...a great reason to say sorry but.....without offendeding them.

Interestingly enough (at least to me), since I've been living in China, my meat intake has taken a dive for the exact reason you mentioned; the inability to identify what the heck kind of critter that came from! Over the last few years, I have started to eat a much greater variety of veggies! I never tried tofu until I came to China, and now it is one of my favorite dishes!
slice brown tofu (the little square ones) with garlic and potato slices in a light soy sauce (very light).
