Are you kidding, what rules?! Haha! Basically anything goes. You can spit, shout at the waiter, smoke, burp etc.
But don't take something from the communal dish with chopsticks then put it back - that's bad.

When eating with several people, make sure the oldest member at the table tastes the food first (先动筷子). It's a mark of respect. When invited for dinner, make sure you toast your guests and don't hold your glass up higher than theirs. If you're the one who asked everyone to come to the restaurant, you should offer to pay the bill. Chinese are alien to the concept of sharing the bill so it would be unimaginable if you attempted to split the bill with everyone. You either pay all or let someone else pay. There's also quite a lot of finesse involved with ordering: like what dishes match, balance of hot and cold dishes etc. Make sure you don't just order vegetarian dishes if you're dining with non-vegetarian Chinese guests. The more meat you order, the better. Also, always order too much than too little.
