Q: What are your "go-to" Chinese dishes?

Mine:

Eggplant in Fish Sauce -  Yuxiang Qiezi -  鱼香茄子
Deepfried potato bits - Xiangla Tudousi  -  香辣土豆丝

tudou niurou (potato and beef)
Xiao bai cai or similar vegetables... or just potato on it's own (but they don't do it here like they did back in my local Jiangxi restaurant).
I second the sweet and sour pork - but it depends on my mood.

Fried rice is one of my favorites. When I'm tired of eating Chinese food, I eat that. I usually don't eat out, and when I do, I don't get to choose what we eat.

Dumplings, Barbeque, Hot Pot and of course the best of all Sichuan food. In all of those I mentioned I pretty much eat anything on the menu.

beef noodles, duck neck, kobe beef & tofu, char si bao (bbq pork buns), green onion cake & honey pork.  Damn, now I am hungry.

I haven't had enough experience to say. I found the prep different. chicken with bones. I really like shrimp, but all I got were whole, heads and skinned. At home shrimps are even 'deveined'.
 My GF either really liked or thought I wanted western food. So the best thing I had in China were buffets or that one pizza.

The cold smacked cucumber with garlic dish , the eggplant dish that has bits of tomatoes and green peppers in it , shrimp dumplings , hot and sour fish , any veggie dish really , esp w/ garlic
