The Chinese visa office currently has my passport, and is renewing my temporary residence permit of 1 year. The thing is, they're holding it for a week, and my current residence permit expires tomorrow. How does that work exactly? What happens if I get asked for my passport and visa? Am I actually illegal for a period of 3 days?

I don't see how you can be, you made the application within the required time. Yeh, you'll be covered, certain of it.

Tell you something though: DON'T make the mistake of crossing out old visas with a pen. I did that and they did NOT like it. Threatened to imprison me for ten days and sent me home with a note.
Same thing happened to me and no problems...it was just an extension but same crap different pile.
It expired 4 days before I got it back and even though it looks bad on paper I have never had an issue with it as it seems to be fine on the system.
Happened to me last year. My permit expired right around the time of the October 1st National Holiday. I made the renewal submission before the expiration date, but due to the holiday, it took more than 2 weeks to get it back. Never heard a thing about it....and I'll probably face the same situation this year. I would keep a photocopy of your passport and residence permit....if they ask you for it, you can explain your situation. Shouldn't be any problems....
If you have gone to the PSB office yourself, they will give you a receipt which states thtat you are renewing your visa.
If your FAO is doing it for you, you may ask for a copy of the receipt.
So, if you get stopped, just show them your copy of your passport and the receipt and you shouldn't have any problems.
