Q: what is the most popular food in china? and what do they use to make it?
No. 1 Hotpot
Hotpot (火锅 huǒguō) is a “dish” to tell apart real Chinese food lovers. If you really appreciate hotpot rather than just ordering fired rice, chow mein, and dim sum all the time, you are truly a Chinese cuisine fan!
The secret of whether a hotpot is good or not lies in the broth, in which all the meat slices and vegetables are cooked.
The most popular food in China is rice.
They use boiling water with pinch of salt ... to make it.
Chinese eat rice with every meal ...
Here it is ... as a bonus for all gourmans here:
... delicacy among culinary ex-ports ... and people who try to slim down ... he he

Westerners might be in for a bit of a shock if they knew how much insect they were eating hangin' out in E/SE Asia, especially if u are havin' a bite of tasty farm veggies! heck,,, over in TL we ate the bugs even after all the veggies were gone,,, deep fried locusts with a healthy sprinkling of salt are a thing up in Isan. ain't bad,,,, ain't good,,, but ain't bad,,,, tastes just like what it sounds like a deep-fried grasshopper slathered in salt..... kinda like a 'rustic' Lay's potatey chip! bug flavour to please the kiddo's!

You know, sometimes is utmost important how food is served ... I mean, just look at the pile of alive maggots makes you puke.
And, they were on sale ... in three different breeds/colours ...
I still ain't hungry as soon as I remember that view from Yingkou outdoor market.
Now, when you step into the Walmart grocery in the city, they sell them in a bowl prepared as salad ... i.e. 'dead'! ... yummy ...
Don’t believe these lies!
The most popular food in China is Mexican flatbread pizza with asparagus and apple purée topping.
Its made from cabbage, sugar, bacon, century egg, and Baijiu.
There are a half dozen styles of Chinese foods based on their original provinces, Cantonese style, Sichuan style, for example.
I'll try to give you one popular choice each out of four styles. (Just a guide, no 100% accuracy guaranteed! )
1. Sweet and sour Mandarin Fish (Song Shu Gui Yu) - Jiangsu & Zhejiang style
2. Hotpot (Sichuan Huo Guo) - Sichuan style
3. Roasted piglin (Kao Ru Zhu) - Cantonese style
4. Peking roasted duck (Beijing Kao Ya) - Peking style
These options are easy to find and affordable. Hope it helps!

i can add any number of verifiable sources and studies to back this up
does this offend or disappoint you?
Stiggs:
This is the pangolin's smirking revenge on humanity.
I can picture the last few pangolins out there in the wild smoking cigars, drinking beer and saying 'oh you like our scales do you humans? here ... have a pangolin virus to go with it, ya feckers."
WangNan2020:
I was expecting some of y'all to say 'I was joking to say bat soup and pangolins are the most popular food in China, to which I might as well ask
How about its preparation?
But they respoonded with links to prove a point! I'm like
Speechless. I need a Mexican pizza to calm down.
icnif77:
Bat is very tasty served in a soup ... I ain't sure how pangolin is cooked. It might be delightful prepped as prosciutto, i.e. raw.
Let's get acquainted since you like the food prep. I'll just hand you one of my famous recipes from China:
