Q: What is quintessially Beijing food?
So I've been to a number of places that people say provide standard Beijing food, but it is always hard to know which ones are local. It is usually hard for major cities to retain restaurants of just their dishes. But besides Beijing duck what is there?
The only dish I'm sure of is madoufu (and that is only because I havent had it anywhere else)
These days? KFC. Fucked up, ain't it? (I prefer Maccers...)

It tastes freaking awesome, and to me, that's as "Beijing" as it can get.

Interesting - no one mentioned Beijing duck. I was here for half a year before I had some - in Hainan.
If you want quintessential BJ food within the 2nd ring, go to Huguosi, just north of PingAnLi (Lines 4 & 6). Ask locals to point out the best places. You'll get real BJ food, but be warned - the tastes, textures and smells were developed for local tastes, not for tourists nor Westerners, as you'll find in Chaoyang and Dongcheng.
How about some 'scorpion kebab'? Small, bbq-ed scorpions on a stick?
'Beijing duck'.....I think'. I am not sure, should 'duck come from Beijing' (to qualify), or that's 'the way how you cook it'.
To find the authentic Beijing foods, I think you should go to those time-honored restaurants as most of Beijing's popular dishes are from the imperial cuisines. But to dine at a time-honored restaurant will be a little expensive. Go and try the Li Imperial Cuisine and Tan Cuisine. There are also some others.
