The raw materials include: mung bean noodles, cornmeal, millet noodles and flour, water, salt.
Put these four kinds of powders together in proportion, and then pour water in it, then some salt, and mix it in to a paste. Divide the big paste into small ones.
Roll out the small pastes slices, and fry the slices in short minute.
Finnaly you get the cripy layer, haha

Great question! I have been wondering that for seven years. Have you ever had a jianbing in Shandong province? I've heard Shandong is famous for jianbing so I went there and tried one. It was rubbish - they put a whole raw leek in it and no crispy layer! Jipped!
