The flavor enhancer! But serious, is this stuff going to kill me or is all of the negative hype just a ploy of the US salt industry? Have there been any reputable studies published on adverse reactions to MSG or suggested limits of daily consumption?
Bonus question: is MSG used anywhere other than China, or was it invented here?
(no more food-related questions today, I promise)
Most countries claim that it is safe to use, even the FDA in the States. But there are some stories that would tell otherwise. They use it all the time in China, so I sometimes ask them not to use it just to limit my intake of it. They use it in Korea and Japan too.
if I eat food with MSG, I'll get a severe headache.
MSG tricks your tongue into making you think a certain food is high in protein and thus nutritious. It is not a "meat tenderizer". It is not a "preservative". The food industry is trying to confuse the issue by focusing on the "fifth" taste sense they call umami. http://en.wikipedia.org/wiki/Monosodium_glutamate
